Summers and watermelon go hand in hand. No second thoughts on that. And this fruit has lot of nutrients, which in turn are concentrated in the rind. So, one has all the right reasons not to discard the rind, but to use it !!!
Unlike the fleshy fruit, the rind is tough and crispy in nature, something like the turnips, but perhaps a little softer. So, it is a perfect candidate for a flavorful cooking !!!
Coming to the dish, it is not just healthy, but is also delicious, while being light on pockets too !!! As we say in India, buying a watermelon is a total ‘Paisa Vasool’ with the scraped out skin being the lone discard !
As a variant to this, you may use ground coconut, Kashmiri red chilli and cumin seeds as the base instead of the masala. It tastes equally good !!!

Ingredients:
Watermelon rind: 4 cups (scraped and chopped)
Salt: to taste
Water: 0.5 cup
Ghee: 2 tbsp.
Cumin seeds: 0.5 tsp.
Garlic: 3 cloves
Ginger: 1 inch
Whole pepper: few
Coriander powder: 0.5 tsp.
Amchur powder: 0.5 tsp.
Turmeric powder: 0.5 tsp.
Garam masala: 0.5 tsp.
Method:
- Clean, scrape and chop the watermelon rind into small pieces
- Melt ghee in pan. Add cumin seeds and let it splutter
- Add chopped ginger and minced garlic. Fry for a minute
- Add pepper powder, coriander powder, amchur powder, turmeric powder and salt. Mix well
- Add the chopped water melon rind. Add water and mix well
- Cover and cook for 10 minutes over medium heat
- Once soft, add garam masala, mix well, switch off the heat and close the lid
- Watermelon rind curry is ready to serve

When I lack time and ideas, but have watermelon rind back home, this is something which I vouch for and yes, I am never betrayed !!!
