Kulfi

Kulfi, a Persian name, is a cup normally used to contain cold desserts. Being a South Asian milk based rich sweet frozen dessert, it is believed that Kulfi arrived in India along with the Mughals, who preferred it during the peak summers. For those who haven’t yet tasted it, it is similar to chilled custard desert. Kulfi comes in different fruit / dry fruit based flavours. There are different ways of eating Kulfi; either using a stick a-la ice candy or a spoon from a bowl just as any sweet dish J All that matters for foodies is the taste… and Yummm… It is just so awesome… Come summer, nothing like having kulfis, with families and friends.

Total time : 100 minutes

Preparation time : 10 minutes


Cooking time : 90 minutes

Servings : 8 sticks

Ingredients :

Full fat milk : 1 liter

Sugar : 1/2 cup

Vanilla essence : 1 tsp.

Cut pistachios and Almonds : little

Saffron strands : Few

Method :

 

  • Soak the saffron strands in warm milk and keep aside
  • In a deep bottom pan bring the milk to boil and then on, heat it in medium flame till the quantity reaches 2/3rd of the original quantity

  • Add saffron, sugar and essence and further heat the milk till it reaches 1/3rd of the original quantity

  • Pour the content to a vessel and refrigerate it for 6 to 7 hours

  • Take the content out, mix it well and pour it in kulfi moulds and keep it in the freezer overnight

  • Take it out, bring the kulfi moulds under the running tap water so that kulfi comes out clean from the kulfi maker
  • Serve it chill in the hot summer!!!

 

Kulfi stories :

Ah!!! Yet again, the story begins with my dear daughter’s demand!!! I want the “Licking stick” as she refers to kulfi / ice candies!!! Every time she sees the road side seller ringing the bell and selling the ice creams outside the parks (which is a very common sight on weekends outside any park in India), she looks at me and makes a sad face. Not that I restrict her from having outside food, my concern is the hygiene. So normally I tell her, “Mamma will prepare you a bigger, tastier one at home, just for you…” and thankfully, she is convinced. Then that I have promised her, I have to even keep up my promise. So, then comes my kulfi!!! And the outcome was Kulfilicious!!! Trust me, it was certified so by my daughter herself.
