A popular Mexican, Latin American dessert – Tres Leches Cake is primarily a mild flavoured cake soaked in 3 different forms of milk – whole milk, condensed milk and evaporated milk! This makes it extra moist, bringing in a very unique taste to the cake.
‘Tres Leches’ in Spanish, translates into ‘3 Milks’- here it refers to the 3 forms of milk used to soak the otherwise simple sponge cake!
Completely drenched in milk, flavoured with mango puree and topped with whipped cream, this homemade cake is perfect for the entire family for all kinds of celebrations!

Honey Cake
Ingredients:
For the cake :
Wheat flour: 2 cups
Yogurt: 1 cup
Mango Puree: 0.25 cup
Sugar: 1 cup
Baking Powder: 1 packet
Oil: 0.5 cup
For the milk mixture:
Condensed milk: 1.25 cup (Please see the recipe below to prepare condensed milk from evaporated milk, in case you don’t have direct access for one)
Evaporated milk : 1.5 cup
Whole milk: 1 cup
Mango puree: 0.25 cup
For the top layer:
Whipped cream: 250 ml
Mango puree: 0.25 cup (for decoration)
Powdered sugar: 0.25 cup
Vanilla Essence : little
Method:
Bake the cake:
· Preheat the oven at 180 deg. C
· Sieve in the dry ingredients mentioned under the Cake section, in a bowl and keep aside
· Combine the wet ingredients together (except mango puree) with sugar and blend. Add the mango puree and give it a mix
· To the above, add the dry ingredients and combine (don’t overmix)
· Transfer it to a greased and lined cake mould and pat to remove any air bubbles
· Bake for 35-40 minutes, until the toothpick comes out clean when inserted (Toothpick test)
· Remove the cake from the oven and let it cool. While it is cooling, you may ready the milk mixture as mentioned below
· Once cool, unmold the cake and place it over a tray with the cake liner
· Now, gently prick the cake. Pour milk mixture in such a way that it seeps through the pricked holes into the cake. Set aside for some time and then transfer it to the refrigerator. Let it absorb overnight
· Next morning, the cake would have by now soaked the milk mixture well and would have attained the perfect rich creamy soft texture.
Prepare Milk Mixture:
· Bring in all the ingredients mentioned under ‘Milk Mixture’ together and keep aside
Prepare Whipped Cream:
· Bring in the cream (Schlagsahne / whipping cream), vanilla essence and powdered sugar together and whip at high speed using a hand mixer until the cream starts to thicken. Now reduce the speed to medium and continue, until it starts to form soft peaks. At this point, one needs to be very careful, not to over whisk! Continue whisking at low speed until the cream forms fluffy peaks. In a spatula, take a small portion of the whipped cream and check if the cream falls freely ! If it doesn’t, then, Bingo! You have the whipped cream of the perfect consistency.
How to prepare condensed milk from evaporated milk?
In case you wish to prepare condensed milk on your own, here is how!
0.5 cup of condensed milk = 0.5 cup of evaporated milk + 0.5 cup of sugar
In a pan, take o.5 cup of evaporated milk and 0.5 cup of sugar and boil, until the milk thickens and condenses further until it reduces to 0.5 cup
Let it cool and include it in your recipe
Prepare Mango puree:
To obtain 1 cup of mango puree, I used 2 mangoes!
· Wash, wipe dry and peel the mangoes
· Cut and slice and transfer to a blender
· Blend to a smooth puree
Mango puree is ready to be used in your recipe!

To mark our little boy’s monthly milestones, we baked a cake (a ritual set by our daughter, where she gets to decide on the cake next!) at home. So, when he turned 7 months old, we baked this delicious cake. All of us, except for the little boy (who didn’t taste it), loved the cake, its flavour and its texture, to the core. Tres Leches (3 milk cake) marked 3 milestones – our little boy turned 7 months, in the same month our girl turned 7 years and the most important – our excitement for our boy’s first flight to India, the very same month!
