A perfect combination of the nutty flavour from the gramflour, unique aroma from the coconut, together with the mouth watering texture offered by ghee with a small twist brought in by the carrot!!! 7 Cup Burfi – this popular South Indian sweet delicacy is a near cousin of the ever popular sweet dish – Mysore Pak.
This recipe gets its name from the measures of the ingredients that goes into its making. It comes with a small twist to the traditional recipe template which demands for 3 cups of sugar. Here, the sweetness is still brought in by the same 3 cups, the only difference being, a combination of sugar and grated carrot make them.
Just as Mysore Pak, this sweet dish too is quite a strenuous one to prepare, but the end result make it all the more worth the effort! But trust me, I have prepared this all by myself in my last pregnancy trimester (to satisfy my cravings), and so I have simplified the process with no compromise to the taste whatsoever!
Here we go :
Makes: 16 pieces
Total Time: 40 minutes
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients:
Gram flour – 1 cup
Fresh grated Coconut – 1 cup
Sugar – 2.5 cups
Ghee – 1 cup
Milk – 1 cup
Carrot – 0.5 cup (Grated)
Method:
· Mix everything in a pan and transfer it to the stove
· On medium heat, keep mixing it until the mixture turns liquidy. Stir it frequently to ensure that no lumps are formed and the mixture doesn’t stick to the bottom / even burn. Continue until it starts to form a mass (approximately 30 minutes on medium low heat)
· Meanwhile, grease a tray and keep ready
· Once done, immediately transfer it to the greased plate and flatten it. Let it sit for 15 minutes. Slowly mark the pieces and let it cool completely (another 30 minutes)
· Cut the pieces and relish!

Well, I wanted to satisfy my pregnancy cravings and this recipe was meant to part achieve it! Ask for any recipe with mom, she has different measures each time for the same dish! Well, not because she forgets, but because she herself keeps experimenting! I had everything ready to prepare 7 cup one day, when I got a call from her (our regular video calls!) I told her that I wished to eat 7 Cup and then we discussed various trial and combinations and finally, zeroed in on the above recipe, which became an instant hit back home!
